Bee Wilson, deservedly named as Fortnum and Mason Food Writer of the Year 2023, is a British food writer, journalist and the author of seven books on food-related subjects as well as a campaigner for food education through the charity TastEd.
She also writes the 'Table Talk' column for The Wall Street Journal and it is in her most recent article that you will find the following unarguable statements:
”The beauty of cast iron (and spun iron, which I prefer because it is lighter) is that instead of getting worse with each use, it gets better…….. I know the idea of “seasoning a pan” sounds strange and complicated, but it isn’t. All it really means is heating the pan with a little oil or fat.
The beauty is that—unlike with modern nonstick—a seasoned pan only gets more seasoned over time.” 12th May 2023
