QUARTET: “A set of four people or things”
There are many famous quartets: the Fab Four better known as the Beatles; Four weddings and a Funeral; four card suits – hearts, clubs, spades and diamonds; tastes – salty, sweet, bitter and sour, before that neophyte, umami,showed up; Four, the imaginatively titled album, which created a quartet of One Direction albums; the horsemen of the Apocalypse rode in as a quartet (allegedly) and then we have the seasons: summer, autumn, winter spring; Vivaldi’s group of four violin concertos; Frankie Valli bandmates and, who could not complete the list with the inclusion of a quattro stagione pizza.
And now we have our own quartet to celebrate with our fourth appearance in the Eat! Section of the Sunday Times magazine, which features terrific recipes by Hannah Evans, all beautifully photographed by Romas Foord.
All of these following dishes were presented in a Netherton prospector pan – a 12” pan is perfect for 4 to 6 people.
In Cheap Eats, there was chickpeas and feta, under £2 a serving
Supper on A Shoestring included one of our favourites, pea and paneer curry;
Summer Classics was a collection of “the only tomato recipes you ‘ll ever need. We think Claire Thomson might have an opinion on that, you’ll find a lot more stunning recipes in her latest book, Tomato.
However, we have to agree that tomato , chicken and chorizo traybake could easily become an oft repeated family supper
Finally, one of the Eight Easy Dishes, the only salmon recipes you need, was for the mouthwatering Greek salmon traybake, glorious Mediterranean flavours, perfect for the summer weather.
All of the recipes look straight forward to scale up or down, depending on how many you are feeding and the choice of prospector pan to match is as follows:
Of course if you are really going big, then you can opt for the 33” pan, but make sure you have enough friends and family around the eat the lot!
