Italian inspiration from Joe Trivelli in the Observer
A is for Apple
And also for artichoke and anchovies. Joe Trivelli’s recipes and Romas Foord’s photographs graced the pages of the Observer Food & drink section at the weekend.

One of these; a sunshine yellow dish presented in a Netherton prospector pan, was the roasted Jerusalem artichokes, eggs and anchovies. As lovers of all three principal ingredients we were delighted with this original and new to us combination.
