The Times EAT: Flavours of Spain

 
 
In the Times EAT section on 9th November 2024, Hannah Evans interviewed Monika Linton, founder of Brindisa about her love of Spanish food and how she introduced the flavours of Spain to the British public over 30 years ago.
 
Romas Foord photographed six classic Spanish recipes, including Garlic and Chill Prawns in a Netherton 12” Prospector pan
 
 
and much loved Patatas Bravas in a 9” chef’s Prospector pan.
 
 
Brindisa runs 5 restaurants and a tapa bar in London , but Monika also shared her 22 favourite Spanish restaurants, which we are delighted to say included our friends at Mountain in London and Bar44 in Cardiff.
