Pastry and potatoes: Nigel Slater, The Observer
Nigel Slater’s Netherton pie dishes live on a stone shelf in a tiny room in his basement, keeping company with cake tins, baking sheets and casseroles. But this weekend he took out his 10” Netherton pie dish to make this luscious looking potato, cheddar and rosemary pie for the Observer magazine (19.1.25). Its golden delicious beauty was perfectly captured by photographer Jonathan Lovekin. If you read the recipe, you will see that he pre-heats a baking sheet on which to place the pie, so that the base cooks perfectly. This really does make the difference to the base of the pie.
This is the kind of food we need when the temperatures dip and the sun refuses to put in even the briefest of appearances, a double carb duvet of a dish, guaranteed to make you feel warmer and a little happier.
