Dr Rahul Mandal spices up your Christmas vegetables in EAT!, The Times

 
If all you know of Great British Bake Off winner Dr Rahul Mandal is his remarkable baking skills, and it has to acknowledged that his cakes truly are works of art, then it’s time to think again.  For the Times Eat! Section last weekend (7/12/24), he brought a spicy hint of his Indian heritage to the British Christmas food traditions that he has so eagerly embraced.
 
 
He has taken our favourite vegetable sides and given them a gentle shake up, a touch of heat and an extra flavour profile.  Just enough to lift us out of our comfort zone, but not so much as to “blow the doors off”, the spices are interesting rather than intimidating.
 
 
Once again, photographer Romas Foord has pulled it out of the bag and the photos of Hasselback parsnips in a chef’s prospector pan and butternut squash with chickpeas in a prospector roasting tray made our weekend.
