Lovely leeks; a St David's Day Prospector Pan recipe.

If you are looking for something a little different to celebrate St David's Day this Friday (March 1st), you might like to try these beautiful golden leeks.
 
Quantities given will feed 2 people.
Gently melt 30g butter in a wide bottom pan, such as a 10" prospector pan and stir in 1 teaspoon of ground turmeric. Carefully clean 1 large or 2 small leeks and cut lengthways - just once if your leeks are slim, or into four if they are chunkier and add them to the pan with 100ml white wine or stock
Poach slowly until the leeks are soft and silky.
Carefully crack two or four eggs, depending how hungry you are, on top of the leeks and cook until the whites are set.
While the eggs cook, carefully toast a handful of broken walnut pieces in a dry pan.
As soon as the eggs are cooked, squeeze over the juice of half a lemon and scatter over the toasted walnuts.
Use buttery mash, cheesy polenta or good bread to soak up all the sunshiney gold.
Put a bunch of daffs on the table and you are all set to celebrate St David and all that Wales has to offer.
