Flavour without faff, it’s certainly a slogan we can live by. Mark Diacono’s knowledge of herbs, spices and how to wring the maximum impact from them, like a washerwoman on piece rate, is second to none. So, who better to turn to for flavour amplification?
In this week’s (29th September 2024) Sunday Times he has taken some supper standards and ramped up the taste profile to tantalising. The premise of the article is that you can lift everyday, familiar recipes by adding simple embellishments, requiring little time or effort. And surely that’s what we all need after a day’s work, especially as the evenings darken. Not only will these tweaks lift the dishes, they will also lift the spirits.
