Sunday Times Table Talk: Mark Diacono shares three of his new recipes from VEGETABLES

 
 
We were delighted to see excerpts from Mark Diacono’s frankly splendid new book, VEGETABLES, Easy and inventive vegetarian suppers,  featured in the Sunday Times Table Talk this weekend (16.6.24).  As he says in the introduction, the book  “..is full of simple, seasonal, home-cooked main meals with vegetables very much at their heart.”  There are heartening echoes of the late Michael Moseley, as Mark tries to persuade us to eat the seasons and grow a little of what we eat, even if it’s only a pot of herbs.  Small things that will make a big difference.  There are even ways of introducing vegetables into puddings, never mind beetroot brownies – so last year – try putting beetroot in your rice pudding!
 
 
The Sunday Times article includes three recipes from the book and we are proud and delighted to see that the Summer Fritatta has been prepared in a Netherton prospector pan.  Indeed many of the recipes in the book are either cooked in or served on Netherton cookware, which Mark describes “with pleasure rather than payment” as the best pans!
