Combining “nostalgia for Kent and southern Italy without any specific tradition”, Joe Trivelli serves up late summer dishes bursting with the sunshine that is currently awol from our late summer skies. At this time of year so many good things are available, not only at their best, but also in abundance. Who else is thanking Kathy Slack for her advice on what to do with an avalanche of courgettes?
In the Observer magazine (20th August 2023) Joe makes the most of the summer gluts with a feast of veg-centric recipes for all our seasonal favourites: aubergines, peppers, tomatoes, sweetcorn, beans, as well as apricots, plums and raspberries. We will be foraging for mirabelles and sweet purple plums in the hedgerows around the workshops over the coming weekend.
