A word or two about pie, from Nigel Slater’s A Cook’s Book:
“In 1988, I wrote a story about the joys of pie. I wanted to include a recipe that required no culinary skill whatsoever….. ‘Easy as pie’ pie……..I simply piled the fruit in the middle of the rolled out pastry and folded the edges over the fruit. I had no idea if it would work. My fear being that the pastry would unfurl and the fruit come spilling out. To my surprise, the crust stayed in place and the pie was a success.”
He then included a recipe for plum and blackcurrant free form pie, baked on a Netherton Foundry heavy duty baking sheet in A Cook’s Book.

SPICE, the latest book by Mark Diacono is as warm and enticing a book as the smell of Christmas pudding.The writing, as ever with Mark, is as entertaining as the recipes are enticing and the descriptions of each spice are immaculately detailed.
The first couple of sentences will evoke memories, good and bad, in many; the Dark Ages of spice use in the UK, when curries were exotic and black pepper virtually unknown. And yes, you younger folk, not all towns had supermarkets in the days when phones were still in boxes or attached to the hall wall!
“Until the first supermarket came to town, there were only two spices in the house: a small pot of white pepper and a tall jar of small, dark red chillies Dad kept in an old Nescafé jar. Every Saturday when we got back from doing The Big Shop, the scent of chillies and cheap mince hitting hot lard would reach my bedroom. Even from there, I could tell when he added the first of many shakes from the small pot of white pepper”.
The whole rambling and often acrimonious argument about cultural appropriation is deftly and sensitively addressed in a single page.

Writer, cook, and stylist Sara Silm has travelled the world from Asia and North Africa, to South America and Europe before settling down with her family in the Béarnaise village of Montfort, located in the Aquitaine region of France, in 2015. And she has managed to distil the very essence of the French countryside between the covers of her book, How to French Country.
More than a dozen pages of startlingly beautiful photographs pave the way to the Preface – The Way Home. This section is filled with evocations of landscape and colour; “colour sorcery…rendering everything pastel-smudged”, “colourful jewels of foliage, golden topaz, amber and garnet”, and skies which are either powder blue, blushing with pink and lavender or storm bruised steely blue and purple.
By page 23 we are ready to pack up all our belongings and head across the Channel, not in search of a “new chapter with a grand plan”, but simply caught up in Sara’s reverie.
Thereafter, she leads us through each room in her new home, describing the renovations from floor to ceiling; taking in the lighting, furniture and finishes, along with all the little extras that stamp their own and their owners’ personalities on to a living space. There is a balanced combination of inspiration – planning a colour palette – with practicalities – power points and plumbing, whilst also balancing the books!
Finally we arrive, enraptured and slightly envious at Part 4, Living with the Seasons; the French Country Kitchen – the very heart of any French country home.
Most specifically we are drawn to the Autumn Kitchen, which reveals a very British Netherton Foundry prospector pan being used for a dish of quails and grapes.

Today we met Alla, who fled Kjiv with her two young children, leaving her husband and parents behind in the war stricken capital. She is currently living with Sylvie, 20 miles from our Highley workshops. Sylvie worked very hard to contact Alla, initially through Facebook and is helping her and other refugees who have sought safety in the UK.
Alla’s 6 year old daughter starts school on Monday – we are sure she will make lots of new friends.
Alla kindly agreed to draw the prize winning ticket out of the hat for us.

We’ve listened to the comments from our friends and regular customers and the new version has a wider rim and base so you can easily make a large 9½ inch ( 24cm) pancake. We’ve also made the sides shallower and increased the radius between the base and side to make it easier to slide the crepe out of the pan.

Nigella Lawson had one of the very first loaf tins we ever made and she has been using them ever since.
You can see a picture of one of the special "First Fifty" tins, full of Breakfast Banana Bread, in Simply Nigella.

When we are not cooking or eating food, you can often find us reading about it. This charming little book, collated by food historian, Dr Annie Gray contains a "collection of food writing which loosely covers the development of British and British influenced food from...the end of the Middle Ages to...rationing during World War II. From parties for the super rich to the desperation of the achingly poor".

It is always exciting to hear of chefs and cookery writers using Netherton pans and a huge thrill to see photos of them feature in their books. So it was a treat to open Mandalay, by Mimi Aye and find not just the most amazing array of tantalising recipes but also to see a 10” prospector pan on page 175.

Life Kitchen
No doubt you have heard us talking about Life Kitchen ever since we attended the inaugural class at River Cottage back at the start of 2018. It is an ambitious and innovative initiative to run free cookery classes for those suffering the appetite suppressing or taste altering side effects of cancer treatment
Since then, Ryan and Kimberley have gone on to great things, including the opening of their own cookery school in Sunderland and Ryan has published the Life Kitchen book, full of “recipes to revive the joy of taste and flavour.” The book is described by Nigella Lawson as “a life changer: this is not gush but a statement of fact” and while it really has been a revelation to those for whom it will derive most benefit, the recipeas are to be enjoyed with gusto by everyone. We speak from experience – we have shared them with Ryan and Kim and have made them ourselves at home.
