The Secret of Cooking by Bee Wilson
This is the distillation of Bee Wilson’s new book, the Secret of Cooking, summarised beautifully by Bee herself:

There is a recipe in the book for a no knead focaccia, based on a recipes dating back thousands of years and further developed by Los Angeles based baker Suzanne Dunaway. Bee has baked her own version in a Netherton Foundry prospector pan and this is pictured on her Cambridge kitchen table, illustrating the article.
